- 1 cup unsalted butter
- 4 cups flour
- 2 cups sugar
- 1/2 tbsp ground cinnamon
- 1 tsp cream of tartar
- 1 tsp baking soda
- 3 Sunny Queen eggs, beaten
- 2 tsp finely grated lemon peel
- 1 Sunny Queen egg white
- 1 tbsp water
- raw sugar
In a very large mixing bowl, stir together the dry ingredients.
Cut in butter until mixture resembles breadcrumbs. Add eggs and lemon peel; mix well to form a dough.
On a floured surface, roll out dough to 3mm thickness. Cut into Christmas shapes with cutters, using a skewer to pierce a hole in the top of the shapes for the ribbon to thread through.
Place biscuits on a lined baking tray. Combine egg white and water and brush over tops of biscuits. Sprinkle biscuits with sugar.
Bake in a moderate oven (180°C) for 8 to 10 minutes or until golden.
Remove to wire rack to cool. When cool, you may need to make the hole bigger for the ribbon using a timber skewer or toothpick. Thread ribbon and hang from your tree.
