Serves 12
- 100g reduced fat margarine
- 75g caster sugar plus extra for sprinkling
- 1 Sunny Queen egg
- 225g plain flour
- 1/2 tsp mixed ground spice
- 1/2 tsp ground cinnamon
- 50g currants
- 2 tbsp milk
Pre-heat the oven to 200C. Line two baking sheets with baking paper.
Cream the butter and sugar together. Add the egg and whisk again.
Add the flour, spices and currants and mix well. Lightly knead, then roll out to a 5mm thickness. Use a shaped cutter to press out about 12 biscuits, re-rolling the dough as necessary.
Arrange the biscuits on a baking tray and brush with milk. Sprinkle over the remaining sugar.
Bake for 12-15 minutes or until golden. Cool on a baking sheet for a few minutes before transferring to a wire rack to cool completely.
