Serves 8
- 400g sweet potatoes
- 400g chat potatoes
- Sunny Queen egg yolks
- pepper
- pinch nutmeg
- 1/3 cup grated parmesan cheese
- 2 tbsp chopped chives
- flour
- 2 Sunny Queen eggs, beaten
- multigrain breadcrumbs
Peel and dice potatoes; cook in a large pan from cold water start until tender. Drain and place back in the pan over a low heat to dry potatoes out a little more.
Mash in a food processor with egg yolks and pepper.
Remove from processor; add the nutmeg, cheese and chives. The potato mix should be firm.
Mould into croquettes. Roll in flour followed by egg wash then finally the bread crumbs.
Spray with oil and bake in a moderate oven at 180°C until golden for 15-20 mins.
