Cheesy Potato Croquettes

ingredients
  • 400g sweet potatoes
  • 400g chat potatoes
  • Sunny Queen egg yolks
  • pepper
  • pinch nutmeg
  • 1/3 cup grated parmesan cheese
  • 2 tbsp chopped chives
  • flour
  • 2 Sunny Queen eggs, beaten
  • multigrain breadcrumbs

  • Peel and dice potatoes; cook in a large pan from cold water start until tender. Drain and place back in the pan over a low heat to dry potatoes out a little more.
  • Mash in a food processor with egg yolks and pepper.
  • Remove from processor; add the nutmeg, cheese and chives. The potato mix should be firm.
  • Mould into croquettes. Roll in flour followed by egg wash then finally the bread crumbs.
  • Spray with oil and bake in a moderate oven at 180°C until golden for 15-20 mins.
