Ingredients

  • 2 Sunny Queen free range eggs
  • 1 Cup Butternut squash cut into 1/2 inch cubes
  • Olive oil
  • 1/2 Cup Quinoa
  • 100g feta cheese, crumbled
  • 1 Handful chopped parsley
  • 1 Handful pumpkin seeds
  • Salt and pepper

  1. Step 1Preheat the oven to 200 degrees and line a baking tray with paper
  2. Step 2Drizzle the butternut squash with oil and roast for 25-30 mins
  3. Step 3Meanwhile, make the quinoa according to packet instructions (you can use stock or water)
  4. Step 4Combine the quinoa with the feta, parsley, pumpkin seeds
  5. Step 5Add the butternut squash and toss through
  6. Step 6Top with 2 fried eggs and serve
