Chop all vegetables.
Heat oil and butter in a pan over medium heat
Once the oil is hot, add onion and sauté until translucent.
Add green chillies, ginger and garlic, and fry on medium heat for 1 minute.
Add tomato and cook for another minute.
Next, add coriander powder, turmeric powder, garam masala and red chilli powder, and cook for 1-2 minutes on low to medium heat
In a bowl, whisk the eggs with salt and add to the pan.
Keep stirring the eggs on low heat until they get mixed with masala and adjust salt to taste.
Add fresh coriander and serve with a lemon wedge.
