Sunny Hot Cross Bun Bread & Butter Pudding

Ingredients
  • 6 Hot Cross Buns
  • 50 g Butter, (salted or unsalted)
  • 4 Sunny Queen Farms Free Range Eggs
  • 2 cups full cream or skim milk
  • 1 cup Cream
  • 1/2 cup Caster sugar
  • 1 teaspoon vanilla essense
  • 1 tablespoon caster sugar, (for cinnamon sugar topping)
  • 1/4 teaspoon cinnamon, (for cinnamon sugar topping)
Method
  • Step 1.

    Preheat oven to 170°c

  • Step 2.

    Whisk eggs lightly with sugar then add milk, cream & vanilla combining all ingredients

  • Step 3.

    Pour through a strainer

  • Step 4.

    Separate hot cross buns, then cut into halves and spread generously with butter

  • Step 5.

    Butter a deep baking dish and arrange hot cross bun pieces inside

  • Step 6.

    Pour half the egg mixture onto hot cross buns, push down gently to absorb the mix. Pour in remaining mixture (pushing down gently again). Allow to stand for 10 minutes to absorb.

  • Step 7.

    Sprinkle with cinnamon sugar

  • Step 8.

    Cook at 170°c for about 30-35 minutes until cooked through, but wobbly in the centre.

  • Step 9.

    Remove from oven & allow to cool slightly before serving.
