Sunny Spring Chickens

A delicious Easter treat

  • Serves 4

  • 4 x large Sunny Queen Free Range eggs
  • 2 x tablespoons mayonnaise
  • 1/2 x teaspoon Dijon mustard
  • 1 x teaspoon apple cider vinegar
  • Salt & pepper to taste
  • 2 x black olives
  • 1 x carrot
  • Step 1.

    Hard boil eggs and peel once cooled

  • Step 2.

    Cut a tiny slice from the bottom of the eggs so they can sit flat

  • Step 3.

    Cut off the top third of the eggs, then remove and place the yolks in a bowl. Be sure to keep the egg tops with their matching base

  • Step 4.

    In bowl add mayonnaise, mustard, vinegar, salt and pepper to the yolks and mash together until smooth

  • Step 5.

    Fill the base of egg with the yolk mixture and loosely replace the egg white tops

  • Step 6.

    Cut out round eye shapes from the olives. Thinly cut carrot into slices, then cut into the shape of feet and small triangles for beaks and put in place
