Pumpkin, Spinach and Fetta Mini Fritters with Caprese Salad

Ingredients
  • 1 Bag Sunny Queen Farms Pumpkin, Spinach and Fetta Mini Fritters
  • 4 tomatoes, ripened
  • 4 bocconcini, sliced
  • 1/4 cup basil leaves
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • salt and cracked black pepper, for seasoning
Method
  • Step 1.

    Open Sunny Queen Farms Pumpkin, Spinach and Fetta Mini Fritters and defrost according to the back of pack instructions.

  • Step 2.

    Prepare a chopping board and knife for caprese salad.

  • Step 3.

    Slice each tomato and bocconcini thickly.

  • Step 4.

    Place on a serving plate and top with basil leaves.

  • Step 5.

    Sprinkle with salt and pepper.

  • Step 6.

    Drizzle the salad with oil and vinegar.

  • Step 7.

    Place defrosted mini fritters next to the salad on the serving plate and enjoy.
