Cook pasta in a large pot of boiling salted water following the packet instructions.
Meanwhile, heat oil in a non-stick frypan over medium heat and fry diced bacon for 2-3 minutes or until crispy.
Drain pasta and add to pan, mixing it with bacon.
On low heat, add 250g Sunny Queen Farms Scrambled Egg Mix and combine with pasta and bacon.
Add parmesan, salt & pepper to pan and stir until creamy.
Plate and sprinkle with parmesan cheese and parsley.
