The perfect healthy lunch and dinner option!
Use a cast iron frypan (20-25cm) that can fit into your oven
Preheat the oven to 140°c
Slice zucchini very thinly lengthways
Cut broccoli into florets and blanch in boiling salted water for 1 minute then drain
Line dish with baking paper and layer with the zucchini, spinach and broccoli
Season with salt & pepper
Sprinkle with chopped parsley and strip thyme leaves from the stalk
Pour 300ml of Sunny Queen Farms Scrambled Egg Mix
In another frypan, heat a tablespoon of extra virgin olive oil over medium heat
Lightly fry haloumi on each side and place on top of egg mixture
Bake in the oven at 140°c for 20-25 minutes or until golden brown
Serve with tomato and basil or with a fresh salad
