Easy Spinach & Fetta Omelette

  • 100 g Sunny Queen Farms Scrambled Egg Mix
  • 2 cups fresh spinach
  • 1/4 cup crumbled fetta
  • 1 bunch cherry tomatoes
  • 1/2 tbsp lemon juice
  • 1/2 tbsp extra virgin olive oil
  • salt & pepper, for seasoning
  • fresh herbs, for seasoning
  • Step 1.

    Steam spinach in pan with water until wilted and place in a bowl.

  • Step 2.

    Spray fry pan with extra virgin olive oil and steam bunch of cherry tomatoes until softened. Place aside.

  • Step 3.

    Pour Sunny Queen Farms Scrambled Egg Mix into a flat non-stick frypan and cook over medium heat until top is almost cooked.

  • Step 4.

    Season omelette with salt, pepper and herbs to your liking.

  • Step 5.

    Add spinach and crumbled fetta on top of the omelette, slide onto a serving plate and fold.

  • Step 6.

    Serve with a drizzle of lemon juice and tomatoes.
