Easter Bunny Salad

ingredients
  • 1/2 Avocado, sliced into wedges
  • 2 baby cucumbers
  • 5 snow peas, sliced length-ways
  • Dill & Basil
  • Your choice of salad dressing
  • Salt & Pepper
  • For the Bunny:
  • 1 Boiled egg
  • Beetroot liquid.
  • Currants
  • Rosemary Sprigs

Method

Place your boiled eggs into beetroot liquid for 3-5 minutes. Remove, pat dry and set aside.

Arrange your salad in a bowl and top with dressing. Slice your egg into pieces and arrange your bunny in the centre of the salad. Enjoy!
