Spaghetti Cups

Enjoy hot or cold- great for lunchbox snacks

  • Serves 12

  • 70 grams Spaghetti, or use left-over cooked spaghetti
  • 40 grams Tomato Paste
  • 150 grams Passata
  • 120 grams Grated Cheese
  • 1 Pouch Sunny Queen Farms Scrambled Egg Mix, (500g)
  • Fresh Basil Leaves, for garnish
  • Salt & Pepper, for seasoning
  • Step 1.

    Preheat the oven to 150°c

  • Step 2.

    Line a muffin tin with parchment cups or grease well

  • Step 3.

    Cook spaghetti in boiling salted water, drain and toss a dash of extra virgin olive oil

  • Step 4.

    Add tomato paste, passata and season with salt and pepper

  • Step 5.

    Divide into muffin cavities, add basil leaves, and fill with Sunny Queen Scrambled Egg Mix

  • Step 6.

    Sprinkle with more basil and grated cheese

  • Step 7.

    Cook at 150°c for 15 minutes or until cheese is lightly browned
