Scrambled Eggs with Avocado, Goat Cheese and Dukka

Ingredients
  • 4 slices thick cut sourdough, or your favourite bread
  • 1 Pouch Sunny Queen Farms Scrambled Egg Mix, (500g)
  • 2 Avocados
  • Juice of half a lemon
  • 150 g Goats Cheese
  • 3 tbsp Extra Virgin Olive Oil
  • A handful of rocket and spinach leaves
  • Salt & Pepper, for seasoning
  • Dukka, for seasoning
Method
  • Step 1.

    Mix avocado with sea salt, pepper, and lemon juice until combined together

  • Step 2.

    Place a frypan on medium heat and add 2 tbsp of extra virgin olive oil

  • Step 3.

    Once hot, pour Sunny Queen Farms Scrambled Egg Mix into the frypan and stir with a spatula

  • Step 4.

    Place the bread in the toaster to desired cooking time

  • Step 5.

    Once eggs resemble a scrambled consistency remove from heat and set aside

  • Step 6.

    Lightly drizzle the toast with extra virgin olive oil and top with goats cheese

  • Step 7.

    Sprinkle dukka on the top of the toast for extra seasoning
