Quick and Healthy Egg Muffin Bites

Can be pre-made and served hot and cold. Perfect to add to lunchboxes or for entertaining.

Ingredients
  • 250 g Sunny Queen Farms Scrambled Egg Mix
  • 1/3 cup grated cheese, alternatively crumbled fetta
  • 1/4 cup red onion, sliced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh chives, finely chopped
  • 1 tbsp olive oil
  • salt & pepper, for seasoning
Method
  • Step 1.

    Preheat the oven to 170°c.

  • Step 2.

    Lightly oil mini muffin tin with olive oil using paper towel.

  • Step 3.

    Pour Sunny Queen Farms Scrambled Egg Mix into cups until 3/4 filled.

  • Step 4.

    Evenly divide onion, parsley & chives into cups, season with some salt & pepper and stir slightly.

  • Step 5.

    Bake at 170°c for 15-20 minutes.

  • Step 6.

    Remove from mini muffin tins and garnish with parsley & chives.
