Chocolate Mug Cake

  • 1 Sunny Queen free range egg
  • 1 1/2 tablespoons brown sugar
  • 1/3 cup self-raising flour
  • 1 tablespoon cocoa powder and extra to dust
  • 2 tablespoons milk
  • 1 tablespoon butter, melted
  • 1/4 tablespoon vanilla extract
  • 1 pinch salt
  • pouring cream for drizzling
  • Step 1.

    Sift flour, cocoa powder and salt into a small bowl, stir through the sugar.

  • Step 2.

    In a small separate bowl, whisk the egg, milk, butter and vanilla. Add the wet ingredients to the dry ingredients and stir with a fork until just combined.

  • Step 3.

    Spoon mixture into a 2 cups capacity (500ml) mug, or two smaller tea cups.

  • Step 4.

    Microwave on high for 70-90 seconds, or until pudding has risen and top is just set. Do not overcook. Dust with extra cocoa powder, serve immediately with a little pouring cream.
