  • 1 tbsp Peanut Butter

Method

Step 1: In a mug pour the Odd Egg Mix, peanut butter and baking powder.

Step 2: Mix the ingredients in the mug until combined.

Step 3: In the microwave heat for 50 seconds.

Step 4: Serve inside the mug or plated. Enjoy!

Middle Eastern Crustless Quiche

Middle Eastern Crustless Quiche

A fantastic recipe for a high protein lunch, brunch or light meal.

ingredients
  • 15ml Olive Oil, to fry
  • 1 Onion, finely chopped
  • 2 Cloves Garlic, crushed
  • 1 Tin Chickpeas, drained
  • 3ml Ras El Hanout Spice or Cumin Seeds
  • 1 Cup Eggplant, finely diced
  • 1 Cup Zucchini or Broccoli, finely diced
  • 1 Pack Baby Spinach
  • 100g Labneh or Persian Fetta
  • 1 tbsp Dukkah
  • Lemon Wedges, Salt & Pepper, for seasoning

Serves: 4-6 People

Method

Step 1: Choose a pan with a metal handle that can go into the oven to bake.

Step 2: Lightly fry the onion and the garlic in a medium pan on the stovetop until soft and translucent.

Step 3: Add the spices, the drained chickpeas, vegetables, and the spinach, and allow them to heat through.

Step 4: Add the Sunny Queen Farms Ready-to-Pour Odd Egg Mix and stir through.

Step 5: Bake in a pre-heated oven at 180℃ for 15-20 minutes.

Step 6: Top with the labneh or fetta, dukkha, lemon wedges, salt & pepper.

Japanese Style Pancakes

Japanese Style Pancakes

Super easy and tasty Japanese style savory pancakes.

ingredients
  • 15ml Oil, to fry
  • 1 Onion, finely chopped
  • 5ml Onion Powder
  • 1 Cup White Cabbage or Broccoli, finely diced
  • 1 Cup Zucchini or Carrot, finely diced or grated
  • 120g Sunny Queen Farms Ready-To-Pour Odd Egg Mix
  • 2/3 Cup Flour
  • 5ml Baking Powder
  • 50-80g Kewpie Mayo
  • 50-80g BBQ sauce or Teriyaki Sauce
  • Lemon Wedges, Spring Onion, Salt & Pepper, for seasoning

Method

Step 1: Chop and place all ingredients into a large bowl, except for the mayo, sauce and lemon wedges.

Step 2: Mix together to form a thick batter.

Step 3: Heat and grease a frying pan with the oil. When at medium heat, cook spoonsfuls of thick batter until golden on each side, making sure they are cooked through.

Step 4: Once cooked, assemble on a plate or platter and then drizzles with Kewpie mayo and sauce.

Step 5: Garnish with the chopped spring onion, lemon wedges, salt & pepper. Enjoy!

Roast Veggie & Fetta slice

Create a fantastic high-protein lunch, brunch or light meal using the Sunny Queen Farms Ready-to-Pour Odd Egg Mix.

ingredients
  • 15ml Olive Oil, to coat veggies
  • 1 Red Onion, quartered
  • 2 Cloves Garlic, crushed
  • 1 Cup Fresh Beetroot, peeled & quartered
  • 1 Pack Baby Spinach
  • 200g Sunny Queen Farms Ready-to-Pour Odd Egg Mix
  • 100g Fetta
  • 1/4 Cup Fresh Basil, for garnish

Method

Step 1: Cut the Beetroot and onions (onions to be cut larger so they both cook at the same time).

Step 2: Roast the onions and the beetroot in the oven or in an air fryer until cooked and roasted.

Step 3: Once cooked, place the onions in a deep baking tray, and then top with the raw but chopped spinach.

Step 4: Add the fetta and top with Sunny Queen Farms Ready-to-Pour Odd Egg Mix.

Step 5: Add the roasted beetroot & onions.

Step 6: Bake at 180℃ for approximately 15-25 minutes, depending on the depth and size of the dish.

Step 7: Remove from the oven and garnish with basil leaves.

Mini Fritter Buddha Bowl

  • 3x Mini Fritters, heated
  • 1/4 cup carrot, grated
  • 1 tbsp mayo, mixed with some water & pepper
  • 1-2 tbsp cheese, grated
  • 1/4 cup shredded spinach leaves
  • 1/4 cup avocado, diced or sliced
  • 1/4 cup cherry tomatoes, halved or sliced
  • 1/4 cup roasted pumpkin or chickpeas/quinoa

Method

Step 1: Place the thinned-down mayo in a small sauce bowl and then place this bowl in the center of a larger bowl.

Step 2: Heat Mini Fritters as per instructions.

Step 3: Prepare all the salad items.

Step 4: Place your chopped salad items and Protein Bites around the sauce bowel in neat piles.

Step 5: Dress the bowl with the creamy sauce.

Tuna Mayo Jars

  • 2 Mini Fritters, heated & halved
  • 1 tbsp grated carrot
  • 3 tbsp tinned tuna, drained
  • 1 tbsp coriander or basil, finely grated
  • 1 tbsp onion, finely chopped
  • 1 ts mayo
  • 1 tbsp cheese, grated
  • 1/4 cup lettuce, your choice

Serves: Makes 2 Jars or one large serve

Method

Step 1: Mix the tuna with the onion, herbs and mayo to form a dressed tuna salad.

Step 2: Cook the Mini Fritters based on heating instructions.

Step 3: Place this into the bottom of your clean jar (can use a bowl or container) and start layering tuna salad, cheese, carrot lettuce, and Mini Fritters (these may need to go last if hot).

Step 4: Serve & Enjoy!

 

Eggy Vietnamese Rolls

  • 2 Mini Fritters, heated & halved
  • 1 tbsp carrot, grated
  • 1 tbsp sprouts
  • 1 tbsp shredded lettuce or spinach leaves
  • 1 tbsp avocado, sliced or diced
  • 1/4 cup cherry tomatoes, sliced or halved
  • 1/4 cup roasted pumpkin or chickpeas/Quinoa
  • 2 sheets of rice paper

Serves: Makes 2 rice paper rolls

Method

Step 1: Prepare the rice paper sheets according to the instructions.

Step 2: Cook Mini Fritters based on pack instructions.

Step 3: Slice all salad ingredients and set aside.

Step 4: Dip rice paper sheet into warm water using a dining plate. Once ready, allow the excess water to drip off and place on a board.

Step 5: Place the halved Mini Fritters on the front half of the rice paper sheet. Top with an assortment of the salad ingredients.

Step 6: Bring the edge closest to you over the filling, forming it into a neat little bundle. Fold the sides up over towards the middle and continue to roll through.

Step 7: Make the next one using steps 4-6 and serve with a Vietnamese-style sauce.

Quesadilla Triangles

ingredients
  • 3x Protein Bites, heated
  • 1 small or medium flour tortilla
  • 1 ts mayo
  • 1 tbsp cheese, grated
  • 6-8 spinach leaves

Method

Step 1: Heat the Protein Bites based on instructions, then slice them in half.

Step 2: Place the tortilla on a plate or board and use a sharp knife to cut the diameter from the center to the end.

Step 3: Place the sliced Protein Bites un the top right corner and top with mayo, spinach leaves and cheese.

Step 4: Fold the bottom right side over this filling, then keep going until you have a neat little triangle.

Step 5: Pop in a sandwich press or toaster for a few minutes until golden & crispy on the outside.

Dyed Easter Eggs

Dyed Easter Eggs

ingredients
  • Sunny Queen Eggs - Fresh or boiled
  • Washi tape for patterns
  • Dye Colour
  • Yellow Dye:
  • 3 tbsp Tumeric powder
  • 1 Ltr Water
  • Blue Dye:
  • 4 cups Purple Cabbage, chopped
  • 1 Ltr Water
  • Pink Dye:
  • 2 Medium beetroor, peeled and roughly chopped
  • 1 Ltr Water

Method

Add water and your chosen ingredient to a small saucepan.

 

Place over high heat and bring to the boil. Reduce heat and simmer for 30 minutes. Remove from heat and cool to room temp. Strain and transfer to a container suitable to place your eggs (there must be enough room so they don’t touch each other, as this will cause inconsistent colouring). Cover and place in the fridge until you’re ready to dip your eggs.

 

Make pattens with washi tape on each egg. Place your eggs into the solution and allow to dye for a minimum of 30 minutes, or until the desired colour is achieved. If you would like a very intense colour, you can leave these to dye overnight.

Remove from dye, dab dry with paper towel and allow to dry completely on a baking rack.
