Method
Can be pre-made and served hot and cold. Perfect to add to lunchboxes or for entertaining.

  1. Set your oven to 180°C (350°F) and grease a muffin tin lightly with olive oil.
  2. Finely chop the spinach, red onion, fresh parsley, and fresh chives.
  3. In a small pan, sauté the spinach and red onion with a drizzle of olive oil until softened (about 2-3 minutes). Set aside to cool.
  4. In a large bowl, pour Sunny Queen Farms Ready-To-Pour Odd Egg Mix, add the grated cheese, sautéed onion, parsley, and chives, season with salt and pepper and mix well.
  5. Evenly pour the egg mixture into the greased muffin tin, filling each cup about ¾ full.
  6. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg muffins are fully cooked and slightly golden on top.
  7. Let the muffin bites cool for a few minutes, then gently remove them from the tin.

Enjoy the goodness of homemade carbonara

  1. Boil salted water in a large pot; cook 400g spaghetti according to package instructions until al dente; reserve 1 cup of pasta water, then drain.
  2. In a large skillet, heat 2 tbsp extra virgin olive oil over medium heat; add 200g chopped bacon and cook until crispy; remove from heat.
  3. Add hot drained spaghetti to the skillet with bacon; toss to combine.
  4. Quickly pour in 250ml Sunny Queen Farms Ready-To-Pour Odd Egg Mix; mix thoroughly, adding reserved pasta water gradually to create a creamy sauce.

Method

A delicious, quick and easy meal using Sunny Queen Farms Free Range Peeled Hard Boiled Eggs!

  1. Slice 8 Sunny Queen Peeled Hard Boiled Eggs in half lengthwise; remove yolks and place in a mixing bowl.
  2. Mash the egg yolks with a fork.
  3. Add 5 tbsp mayonnaise, 1 tbsp Dijon mustard, 2 tbsp white wine vinegar, squeeze of fresh lemon juice, and 1 tbsp extra virgin olive oil; mix until smooth.

  1. Preheat oven to 160°C (320°F).
  2. Mix crushed biscuits with melted butter; press into a springform pan base and bake for 10 minutes. Cool.
  3. In a large bowl, beat cream cheese and sugar until smooth.

Method

Beat eggs and water together until blended.

In a 26cm coated pan, heat butter until it sizzles. Pour in egg mixture.

With an inverted spatula, pull cooked portions of egg from the perimeter of the pan to the centre so uncooked egg can reach the hot pan surface, tilting the pan and moving it as necessary to keep the egg shaped round on the bottom of the pan. Do this until the egg is set and will not flow, but is still very wet on top (should take about 20 seconds). Don’t cook it until it’s dry! The moist egg will cook when the omelette is folded.

Sprinkle all of the filling on the left side of the egg (left handed people fill the right side).

Slide the spatula all the way under the unfilled side of the omelette up to the centre of it.

Fold the unfilled side entirely over the filled side. Set aside spatula.

Holding the pan in your right hand and a plate in your left hand, invert the pan so the omelette falls upside down onto the plate (left handed people use opposite hands).

Garnish and serve.
